Inspecting
Before shucking, make sure each shell is tightly closed and free of drips—this tells you the oyster is alive and as fresh as a Gulf breeze.

Storing
Refrigerate oysters flat-side up under a damp cloth for maximum shelf life. If you choose to ice them, keep oysters above the meltwater, as they will “drink” the water and lose their briny flavor.

Shucking
With the oyster cupped-side down in a gloved hand, insert a sturdy knife into the hinge, twist firmly, then slide the blade along the top shell to release the meat. Pop it open—and enjoy a taste of the bay!
